I started this blog because I thought it'd be the perfect outlet for me to get my thoughts, recipes, inspirations and passions in order and a way to hold myself accountable for all of the above.<br>

As much fun as I'm having, I feel like I can go a little bit bigger. Posting recipes and a few motivational essays is just the beginning.<br>

Giving myself smaller goals has definitely put things into perspective. Through some exploration, I've found out what subjects are exciting for me and which ones are more personal and/or probably not ideal to share just yet. <br>

On those days, I definitely have my go-to foods that leave me feeling nourished and full without much hassle.<br />

And let's face it, sometimes I just throw a bunch of random stuff together until it tastes good. Case in point: #4<br />
<br />
Here's a quick peek into some of my favorite easy meals. I added some instructions for each below, but feel free to comment or email me if you have any questions. They're super easy to improvise though, so don't be afraid to mix things up and make them your own.<br />

1. <b>Veggie quesadillas</b>. It doesn't get any easier than throwing veggies into a tortilla and calling it a meal. My favorite quesadilla looks a little like this:<i> </i><br />
<i><br /></i>
<i><u><a href="http://www.foodforlife.com/product/tortillas/ezekiel-49-sprouted-whole-grain-tortillas" target="_blank">Ezekiel sprouted grain tortilla</a></u>, lightly sauteed vegetables (spinach, zucchini, cherry tomatoes, and bell pepper), black beans, cilantro, my favorite salsa and hummus. Spread the hummus on first and then pile all of the goodies on top. Fold tortilla in half (or use two if you'd like). Heat up in a large pan until both sides are golden brown. </i><br />
<i><br /></i>
<i>2. </i><b>Smoothies! </b>Who doesn't love a good smoothie? While I usually save these for a post-workout treat, I will also blend one up when I have no clue what else to eat. Obviously you can throw just about anything into a smoothie, but I have a formula I like best:<br />
<i><br /></i>
<i>One scoop protein powder (I use<u><a href="http://www.nowfoods.com/Pea-Protein-Powder-2lbs.htm" target="_blank"> pea protein</a></u> or <u><a href="http://vegasport.com/product/performance-protein/" target="_blank">Vega</a></u>), 1 cup almond milk or coconut water, 1 cup spinach or kale, 1/2 frozen banana, 1/2 tablespoon maca powder, 1/4 cup frozen or fresh berries, 1 tablespoon chia seeds.</i><br />
<br />
3. <b>Pancakes. </b>My pancakes are super basic. I'll switch up the flour I use, but the majority of the flavor comes from my toppings.<br />
<i><br /></i>
<i>1/3 to 1/2 cup flour (buckwheat, oat, or spelt), 1/2 cup almond milk, 1/4 teaspoon baking powder, 1/4 teaspoon vanilla extract, cinnamon, 1/2 tablespoon ground flax, and a pinch of salt. My toppings usually include sliced banana, hemp seeds, shredded coconut, nut butter, sliced almonds and some berries or chopped apple.</i><br />
<br />
4. <b>Carbs, Protein, Good Fats, Whole Grains. </b>Now this was a random meal I made on a whim and then continued to eat every single day for about a week. Yeah, it turned out pretty well.<br />
<br />
<i>One sweet potato, hummus, spinach, black beans, quinoa or brown rice, sprouted pumpkin seeds and avocado. Poke sweet potato a whole bunch with a fork and then bake at 425 for 50 minutes, flipping halfway through. While the potato cools a bit, I heat everything else up in a skillet and then spoon everything on top. That's it. Simple and so very tasty.</i><br />
<br />
5. <b>Oatmeal!</b> Oh man, do I love me some oatmeal. My breakfasts are oatmeal-based about 95% of the time. You can do just about anything with oatmeal, but the photo above is pumpkin pie recipe topped with buckwheat granola, coconut, blackberries,almond butter and sliced almonds.<br />
<br />
<i>For the pumpkin pie base, I cooked 1/2 cup rolled oats in about 1/2 cup coconut milk and added two tablespoons canned pumpkin, thinly sliced banana for natural sweetener, 1 teaspoon cinnamon, a pinch of nutmeg, 1/4 teaspoon vanilla and 1/2 tablespoon ground flax. Cook over medium-low heat for about 5 to 10 minutes depending on the consistency you like. </i><br />
<br />
6. <b>My favorite sandwich. </b>Sometimes convenience foods aren't so bad, am I right? I absolutely love <u><a href="http://www.tofurky.com/tempehproducts/marinated_strips.html" target="_blank">Tofurky's Tempeh Maple Bacon</a></u>. My favorite way to dress it up is on a classic BLT and avocado sandwich. The <u><a href="http://happycampersgf.com/" target="_blank">Happy Campers</a></u> bread is a local company and I highly recommend them if you're in the Portland area! Their bread is hearty, filling and made of only the best ingredients.<br />
<br />
<i>Heat the tempeh bacon in a skillet until lightly brown and then just top with spinach or mixed greens, sliced tomato and avocado. Sometimes I use<u><a href="http://followyourheart.com/products/original-3" target="_blank"> Vegenaise</a></u> but we didn't have any in the house so I skipped it this time around. You could also use hummus or another spread if you'd like extra flavor.</i><br />

So there you have it! Hopefully this gave you some ideas for super quick and easy meals in a pinch. I'm going to keep this intro short and sweet: calorie counting sucks. It can leave you feeling out of control, obsessed and exhausted. Even though many big-named nutritionists and trainers will tell you otherwise, here are my personal reasons for throwing in the calorie-counting towel and tips on how to listen to your body instead. So, here we go.<br />
<br />
<br />
<b>1. It can become daunting and turn into an obsessive and unhealthy behavior. </b><br />
<br />
Want to go out to eat with your friends on a Saturday night? Unless you become a complete control freak, chances are you can't always pick the place and it's also likely the restaurant won't be listing calorie information on their menu (unless they're a nationwide chain, but what's the fun in that?)<br />
<br />
So what are your choices? Stay home and miss opportunities to eat delicious food in great company <i>or </i>make smart choices, eat slowly and maybe even take home leftovers? That doesn't seem like a tough decision at all, now does it?<br />
<br />
Even more importantly, constant calorie counting can lead to obsessive behavior. What happens when you're obsessing over every single piece of food you put in your mouth? You get burnt out, which often leads to exhaustion and binging when you've had enough. Smart choices don't have to be so draining - a good balance of healthy foods and "treats" should always be the goal.<br />
<br />
<b>2. Most people don't know the actual amount of calories they truly need.</b><br />
<br />
How active are you? Day-to-day, is your activity level exactly the same? Do you <i>really</i> know your <u><a href="http://www.acefitness.org/certifiednewsarticle/2882/resting-metabolic-rate-best-ways-to-measure-it-and/" target="_blank">resting metabolic rate</a></u>? Generally speaking, very few of us know this information off the top of our heads.<br />
<br />
When I first began my clean eating and weight loss journey this time around, I was shocked at how active I truly was. Between my job, walking my dog several times a day and my fitness routine, I was basically malnourished thanks to society's norm of suggesting a 1500 calorie intake for women who are trying to lose weight. Because of this, I was often cranky and exhausted without knowing why. After getting professional help, I'm back on track and fueling my body correctly. Oh, and I'm not so damn angry (or <i><u><a href="http://www.urbandictionary.com/define.php?term=Hangry" target="_blank">hangry</a></u></i>) all the time, thank you very much.<br />

<br />
<b>3.</b> <b>All calories are NOT created equal.</b><br />
<br />
While it can be really helpful to log your food intake at the beginning of a diet change, it can also give you the false impression that everything will balance out simply by doing so.<br />
<br />
Contrary to popular belief, 500 calories of fast food french fries is <i>not</i> the same as 500 calories of a meal full of veggies and quinoa. Not only will your body react completely differently to the two meals, but the way that you digest them will be completely different as well.<br />
<br />

<i>Case in point:</i> have you ever tried to work out a hour after going through the drive-thru? It sucks. The food doesn't' even feel like it has digested and your workouts won't be as intense or efficient. In fact, your workout will leave you feeling sick and drained when it should be boosting your energy and mood! Not cool, chocolate milkshake. Not cool.<br />

<b><i>The point of the story:</i></b> Listen to your body. Are you hungry? Eat. Are you full? Stop. Do you feel as though you need extra fuel for an upcoming workout? Then feed your body! Believe me, it will thank you for doing so.<br />

<b>3-4 Medjool dates, soaked for an hour</b><br />
<b>1 1/2 tablespoon unsweetened shredded coconut</b><br />

<b>In a food processor, blend cashews, dates and shredded coconut until smooth. Add in the rest of ingredients and process until just combined. The end result should be a thick and creamy consistency, in-between a nut butter and a cream.</b><br />

<b>Serve with your choice of fresh fruit, graham crackers, pretzels, etc. and dip away!</b><br />

When the weather warms up and the sun sticks around for hours on end, I'm instantly happier. And what better way to celebrate that happiness than to throw a bunch of my favorite things into one recipe?<br />

On a whim, I decided I needed something sweet and wholesome to snack on while I did some sunbathing and reading yesterday afternoon. I also didn't want to run to the store so it had to be made up of readily available ingredients.<br />

We are all familiar with that old saying, right? Well, this recipe is kind of like that except for it should be eaten and not seen. Hey, not all of us can be beauty queens.<br />
<br />
Nope, this recipe certainly isn't very photogenic but I promise you it's very tasty.<br />
<br />
I adapted this recipe from a very foggy memory of my mother's classic tuna salad sandwich she made me for many weekend lunches when I was a little one. I'm not sure if I nailed it but I am pretty proud of the flavor combination. It's got something for everyone: sweet, tart and savory.<br />
<br />
I kept the dressing pretty simple, making sure to give it a nice balance of creamy and sweet and then mixed in some delicious chickpeas, sweet apple and carrots and a little bit of pickle for a special surprise. If the pickles scare you, I totally understand - omit that stuff or add them on later while assembling your sandwich or wrap.<br />

<b>Just last month, I was done with everything. I was fed up with work and my attitude and the way I felt about myself. Nothing huge happened to make me feel this way but I could feel myself getting more and more dissatisfied with everything going on with and around me. And so I decided to change. It wasn't easy but it was definitely necessary.</b><br />
<b><br /></b>
<b><br /></b>
So how did I do this? <b>Baby steps, people. </b><br />
<br />
1.My first step was to <b>start treating my body better</b>.<br />
<br />
Since I had already made fitness a regular part of my life several months ago, this seemed to be the easiest mini-goal to set.<br />
<b><br /></b>
<b>Mini-goals are a great starting point and I can't recommend them enough. If you start off too big, chances are you'll get frustrated and give up. Take something you already have a head-start on and go with it. </b><br />
<br />
I cleaned up my eating habits by cutting way down on processed foods and limiting my sugar intake. I also upped my fitness game. While taking it slow in the beginning worked wonders (doing activities I love like long hikes, yoga, pilates, etc.), <i>I eventually decided I was confident and strong enough to push myself a little bit more.</i> I started doing HIIT regularly and finally working the hell out of my upper body.<br />
<br />
<i><b>Nerdy anecdote: </b>I can now do push-ups! What?? This has literally been a goal of mine for over a decade. Crazy, right? All it took was time. Instead of giving up, I pushed myself a little bit every single day until my weak arms finally got the job done. Way to go, arms - you don't suck as much as I thought.</i><br />
<br />
2. Then <b>I stepped out of my comfort zone.</b><br />
<br />
For me, this meant <b>doing what I love out in public.</b> Specifically, I started attending yoga classes. Yoga has been a passion for me for years, but I never had the confidence to attend a class. Practicing with a teacher and in front of other students gets me excited to continue doing so. It turns out a pro can teach you a ton and having a class setting keeps me really motivated and excited about learning as much as possible. Also? It's not scary at all. In fact, it feels incredibly natural.<br />
<br />
3. And the biggest change? <b>I put my money where my mouth is. </b><br />
<b><br />
I spent so many years talking about what I <i>wanted</i> to do without actually doing it:</b> develop recipes, become a self-sufficient human being, learn more about my passions, go back to school, do something I truly love, etc. etc. So what was stopping me? Just a garbage attitude and negative thoughts. I wasted so much time being upset about the way I felt; time I could have spent building myself up.<br />
<br />
Lesson learned, right? Moving on.<br />
<br />
So here I am. I spend my free time building this space in which I can continue to grow and share my experiences with you. I finally took that photography course to up my game. I started building a community of people that motivate and encourage me. I am taking in so much information about nutrition, clean living and ethics that I can't wait to share with you all. It's kind of fantastic.<br />
<i><br /></i>
<i>My advice to you would be to take <b>ANY</b> free time you have and spend it doing something you really enjoy. Instead of plopping down in front of the tv or sulking in your own misery, go do that thing you keep saying you wish you did. Seriously. Do it. </i><br />

<br />
And now? I feel confident that I'm going in the right direction...even if I'm not sure where exactly that direction is going to lead me yet. So far, it's been a freaking blast.<br />

On the other hand, buying and cooking in bulk often means a smaller grocery bill and effortless meals for the entire week. So yeah I guess it's worth it, right? But then again, the boredom….<br />
<br />
In an effort to spice things up when you just can't take another bite of that bottomless crockpot chilli you made on Sunday night, I thought I'd share some ways in which I switch up a basic bulk recipe to keep things interesting throughout the week.<br />
<br />
First up: Tofu Scramble!<br />
<br />
If you're a vegan or vegetarian, chances are you have your favorite tofu scramble recipe memorized. If not, here are a few of my favorites to get you started:<br />

<b><u>Leftover Makeover: Tofu Scramble Casserole</u></b><br />

1 cup prepared tofu scramble<br />
1/4 cup cooked quinoa<br />
1/3 cup cooked or canned chickpeas<br />
1 cup kale, finely chopped<br />
1/3 cup cherry tomatoes, halved<br />
1/4 cup chopped zucchini<br />
2 tablespoons vegan cheese (I used <a href="http://us.daiyafoods.com/products/dairy-free-cheese-shreds/mozzarella-style-shreds" target="_blank">Daiya's mozzarella </a>version)<br />
a pinch of red pepper flakes<br />
Optional: 2 tablespoons panko bread crumbs<br />

Preheat oven to 350<br />
<br />
In a large bowl, mix everything together except for the panko crumbs. Once they are combined, press firmly into a 16 oz ramekin dish (or several muffin tins if you don't own single baking dishes). Sprinkle bread crumbs on top.<br />
<br />
Bake for 15-20 minutes. Let cool for 5 minutes before serving.<br />

I love this recipe. The baking method leaves you with a cheesy, gooey casserole for one full of flavor and goodness. The cherry tomatoes get rich and juicy and the kale will crisp up, giving this dish a nice bite. Remember those scrambled eggs with melted cheese on top mom used to make? Yeah, kind of like that. <b>Ingredients:</b><br />
1/2 cup peanuts, raw and unsalted<br />
1/2 cup medjool dates, pitted<br />
1/4 cup dried berries (I used a cherry/blueberry mixture)<br />
1/2 tablespoon of peanut butter or almond butter<br />
1 tablespoon of your favorite jam or jelly (you can sub fresh strawberries as well)<br />
pinch of salt<br />
1/4 tsp vanilla extract<br />
*3 tbsp rolled oats<br />
<br />
Except for the oats, add all of the ingredients to a food processor and mix until batter forms a sticky consistency.<br />
Roll into balls, about 1 inch in diameter.<br />
*Optional: roll balls in old fashioned oats<br />

I spent many childhood mornings, oatmeal in hand while Bobby's World played on the tv. It was the best. But back then, oatmeal had just two ingredients: brown sugar and maple syrup. Oh, and buttered toast on the side. Easy peasy.<br />

I like to think I've gotten a little more creative since then, while still sticking with simple and wholesome ingredients.<br />

<b><u>Very Cherry Berry Chocolate Baked Oatmea</u></b>l<br />
1/2 cup rolled oats<br />
1/2 ripe banana<br />
1 tbsp ground flaxseed<br />
1/2-1 tbsp unsweetened shredded coconut<br />
1/2 tsp cinnamon<br />
1/4 tsp vanilla extract<br />
1/4 cup & 1 tbsp almond milk (or other non-dairy milk. Creamer or coconut milk would make this even more decadent)<br />
1 Tbsp cacao or cocoa powder<br />
1/2 tbsp cacao nibs or dark chocolate chips<br />
<b>Optional</b>: 2 tbsp chopped berries<br />
<br />
Preheat oven to 350<br />
<br />
Lightly oil a ramekin dish or another single-serving baking pan (I used a round 6-inch ramekin) In a medium bowl, mix ingredients until just combined. Pour mixture evenly into dish. Cook for about 20 minutes.<br />
<br />
1/4 cup chopped strawberries<br />
1/4 cup chopped frozen cherries<br />
1-2 tsp liquid sweetener (I used monk fruit)<br />
1 tbsp water<br />
<br />
In a small saucepan, add strawberries, frozen cherries, sweetener and water together. Heat until cherries and berries start to soften and frozen cherries start to melt, about 5-7 minutes. Once they've combined into a sauce, spoon topping onto your baked oatmeal.<br />

All of that background noise is getting less and less prevalent in my daily life, only sneaking up on me in moments of weakness or panic. Growing up (an act that takes much longer than your 10-year-old self ever imagined) is a rough ride - it can really knock the wind out of you, over and over again. <br />

To recap my pretty wonderful week, I thought I'd share a few things I've been loving lately.<br>

1. <a href="http://www.brendanbrazier.com/" target="_blank">Brendan Brazier</a> is a freaking trailblazer and I love everything about him: <a href="http://myvega.com/" target="_blank">his protein powder</a> is kind of like superhero magic fairy dust. And this cookbook? It's full of great recipes that taste delicious but also make you feel like that superhero fairy hybrid on a regular basis.<div><br>
2. Kombucha is kind of an acquired taste and I happen to be one of those weirdos that love it. My favorite right now is the <a href="http://synergydrinks.com/index.php/products#enlightened-kombucha" target="_blank">Lavender blend by GTS</a>.</div><div><br>
3. Speaking of an acquired taste, seaweed is definitely a flavor that took me awhile to warm up to. All of a sudden I love it, especially when it's mixed with gourmet popcorn. <a href="http://www.479degrees.com/index.html" target="_blank">479</a> is a responsible and inspiring company and their popcorn line is full of innovative flavors and only the best ingredients. I can't get enough.</div><div><br>
4. I stumbled upon <a href="https://www.etsy.com/shop/SuperLoveTees?ref=l2-shopheader-name" target="_blank">this Etsy store</a> via Instagram.<a href="https://www.etsy.com/shop/SuperLoveTees?ref=l2-shopheader-name" target="_blank"> Super Love Tees</a> are all about spreading the love via spiritual messages and are printed on super comfy and adorable clothing. I own the one above and it's my favorite item to wear when I need a little inspiration in my life.</div><div><br>
5. Slowly but surely, I'm phasing out as many chemical-based products as possible. My first order of business was to find a foundation that not only looked good but was a little more eco-conscious than those drugstore brands. <a href="http://tartecosmetics.com/tarte-shop-foundation?gclid=CN6OgOrM2b0CFdBqfgodNEAAjQ#" target="_blank">Tarte</a> may be a little pricey, but I think the trade-off of knowing what you're putting on your skin is totally worth it.</div><div><br>
6. I've been a <a href="http://www.bust.com/" target="_blank">Bust</a> fan for over a decade, so I finally decided it was time to subscribe. This magazine is all sorts of wonderful. Like sassy and strong ladies? This is your jam.</div><div><br>
7. Kind of a random favorite, but I'm all about camo for the spring. I love mixing a camo print with something more girly, like a v-neck shirt or a floral pattern. It's a great balance of tough and feminine and I dig it a whole lot.<br>

And it was so delicious that I've been craving it ever since. Originally full of butter and cream, I wanted to put my own vegan and (semi) healthy spin on it. Oh, and I couldn't help but spice it up with some unexpected flavors.<br />

I gotta admit - I was nervous and intimidated to tackle this baby. What is it about bread making that makes it so untouchable and forbidden? <br />

Nerves aside, I decided to face my fears and attempt my first homemade loaf of bread. All for the sake of a craving. And guess what? The results were pretty darn tasty.<br />

<i>Some ingredient notes:</i><br />
*You could probably use any flour mixture you want. I decided on gluten free and basic flour simply because it's what I had on hand in the largest amounts. Also this specific gluten-free mix gives the bread a density that is key for this specific recipe.<br />
*Since I'm not the biggest fan of raisins, I substituted figs. They're a little more rich in flavor and compliment the rosemary really well.<br />

Preheat oven to 350 and lightly oil a flat baking sheet<br />
<br />
In a small bowl, combine almond milk and apple cider vinegar. Set aside<br />
<br />
In a (very) large bowl, sift together the flours, sugar, baking soda and salt<br />
<br />
Cut shortening into dry mixture. You can do this with a mixer, your hands or two knives. I find it easiest to do it with my hands so I can feel the shortening blending into the mix evenly.<br />
<br />
Create a hole in the middle of your flour mixture and pour the almond milk into the center. Add the dried figs and rosemary. Mix until just combined.<br />
<br />
Lightly flour a flat surface and gently kneed dough until it comes together, forming a disc shape. Do not over-kneed as this will make your bread tough.<br />
<br />
Form into a medium-sized disc, about 1 1/2 inches in height and place on baking sheet.<br />
<br />
Bake bread for 55-60 minutes (time may vary depending on flour mixture)<br />

<b>Dry ingredients:</b><br />
2 tbsp oat flour<br />
2 tbsp rolled oats<br />
2 tbsp almond meal<br />
1 tbsp flaxseed meal<br />
1/2 tsp cinnamon<br />
a pinch of salt<br />
1/4 tsp baking powder<br />

<b>Wet ingredients:</b><br />
1/4 cup and 1 tbsp almond milk<br />
1 tbsp coconut oil, Earth Balance or apple sauce<br />
1/2 tsp almond extract<br />
1 tbsp sweetener of choice (I omitted this but you could use agave, maple syrup, Stevia, or cane sugar)<br />

<b>Add-ins:</b><br />
1 tbsp walnuts<br />
1 tbsp chopped almonds<br />
1-2 tbsp dried fruit<br />
1/2 tbsp unsweetened shredded coconut<br />
1/2 tbsp hemp or sunflower seeds<br />
<br />
Preheat oven to 350 and lightly oil a 6-inch ramekin. If you don't have a ramekin, feel free to use a muffin pan, an oven-safe mug or a mini cake pan.<br />
<br />
In a medium bowl, mix dry ingredients together. Add in wet ingredients and mix until just combined.<br />
<i>*If you're using Earth Balance or coconut oil, make sure it's melted and slightly cooled</i>. Once the base is combined, stir in add-ins. Pour mixture into ramekin and smooth out the top.<br />

Bake at 350 for 18-20 minutes<br />
<br />
Once the pancake is slightly cooled, transfer onto a plate and top with syrup, fruit, nut butter, etc.<br />

Overnight oats became a staple in my breakfast rotation several years ago. I ate them about 3 times a week. But like most repetitive habits in life, things got a little dull. All of a sudden the cold oats weren't doing the job and the mushy texture just didn't sit well with me anymore. <br />

<b>Chunky Monkey (esque..) Overnight Oats</b><br />

<b>1/4 cup steel cut oats</b><br />
<b>1 tbsp chia seeds</b><br />
<b>1 tbsp flaxseed meal</b><br />
<b>1 tbsp raw cacao powder</b><br />
<b>1 tbsp cacao nibs</b><br />
<b>1/4 tsp cinnamon</b><br />
<b>1/2 tsp vanilla extract or vanilla bean</b><br />
<b>pinch of salt</b><br />
<b>1/2 cup water</b><br />
<br />
Combine above ingredients in a bowl or a mason jar. Once they're mixed together, pour boiling water over the ingredients. Stir until combined. Allow to cool to room temperature. Once they have cooled, cover and place in the fridge overnight.<br />
<br />
In the morning, top with:<br />
<br />
<b>1-2 tbsp nut butter (peanut butter, almond butter, sunbutter, they're all wonderful)</b><br />
<b>1 tbsp shredded coconut </b><br />
<b>1 pitted medjool date, chopped</b><br />
<b>2 tbsp sliced almonds (walnuts would work great here but I was all out)</b><br />
<b>1 ripe banana</b><br />
<br />
<b>*For an extra special treat, heat up 1/4 to 1/3 cup of coconut milk and pour over your beautiful creation. It will heat up your oats and also melt everything together wonderfully, making it extra decadent. </b><br />

It's been a long time coming, but I've finally decided to own up to my sugar-obsessing ways. Even though sugar can be a totally wonderful treat for those of you out there without food issues, it just leads to a path of overeating and obsession with me. And frankly I'm sick of it.<br />

For the month of April, I've decided to cut out all added sugar from my diet with the exception of whole foods. I mean...who wants to live without fruit? Not this lady.<br />
<br />
For this first month, I've decided to limit myself to very little dried fruit simply because it can be a trigger for me. Because dried fruit is so concentrated in sweetness, it often comes off as candy-like and can give me that same sugar rush that other sweets do. So for now, I'm keeping it simple.<br />

When your mood and personality is altered negatively by what you're putting in your body, it's time to make a change. I'm kind of sick of counting on the wrong foods to pick me up...because I always come crashing down.<br />

My favorite part of any breakfast is choosing the toppings. You know, basically all of the good stuff you use to decorate your meal. Maybe this speaks to the visually obsessed person I am, but I love a ton of texture, flavor and color. In this particular breakfast I added <b>sliced almonds, chia seeds, hemp seeds, shredded coconut, flax meal, cinnamon and vanilla bean. </b><br />
<br />
<b>To the right:</b> my base on this particular morning was <b>cooked wild rice and unsweetened almond milk</b>. Other options include oats (steelcut, rolled, Scottish), quinoa, brown rice, or buckwheat groats. Endless possibilities, folks.<br />
<br />
I stick to natural sweeteners such as a pitted date, bananas, and/or berries. Yum!<br />

I recently went back to my strict vegan ways and I couldn't be happier about it. I have been a full-on vegetarian since the age of 11, but I've always been pretty wishy-washy when it comes to going full vegan. Cravings, society, convenience - all of these issues played a big role in the past. I tried and failed several dozen times.<br />
<br />
I cut out most dairy at the beginning of this year (except for a pizza night here and there) but continued to consume eggs. When I started to really clean up my diet, eggs seemed like a great and easy source of protein. And then I just kind of got sick of it and decided to cut everything animal-related out of my diet on March 1st.<br />
<br />
Like most Americans, I like starting new things at the beginning of something: a month, a week, and birthday etc...it just feels right. It's the epitome of a fresh start, and who doesn't love that? A clean slate is a wonderful thing.<br />
<br />
So without having any kind of long-term goals pertaining to this mini journey, I just went for it. And guess what? It's been the easiest decision I've made in a long time.<br />
<br />
Not only do I feel better overall (even when indulging in vegan desserts galore on a bad day), I have no desire to eat dairy or eggs at all. Like...ever. This is a first for me and I'm embracing it whole-heartedly.<br />
<br />
I know veganism isn't for everyone, but this seems like the right path for me. I have been on this journey for a very long time. I'm not 100% sure what has made this decision stick this time, but I think it's a combination of things: I'm in a really good place with my health and fitness. I have made a conscious effort to really think about what I'm putting in my body so it only makes sense that my true ethics would shine through and overpower any poor decisions I've succumbed to in the past. <br />

And then there's the fact that I've stopped denying my feelings and fears in general. No more hiding from the truth and this includes the truth about our food industry. <br />
Generally speaking, it's the right time for me. I'm in it for the long-haul. This realization is so powerful and it gives me so much peace.<br />
